Could someone tell me why I can't, or shouldn't, use An550 wood screws when piano hinge attaching my wood flaps to my wood wing?

At 1" spacing it would be over 30 screws on each side and the wood is over 3/4" thick. Would be plenty stout I think.

Plans call for 3/16" bolts and nut plates. That sounds heavier to me, way overkill and a lot more of a pain.

A search turned up the same question but no answer.

Much appreciate any comments.
