I have considered building an S1 for some time and before I get too old need to get on with it. With the demise of Great Plains and all they offered to the Sonerai community is it reasonable to think one can build an S1 without them?

Yes very possible to build without them.
 
They list parts on their website. I'm hoping they actually will make spar channels and ailerons when it comes time for that...
Nope they don't make anything for the Sonerai . The Sonerai is plans build 100%. I can make you parts of you want but sonex is a definite no. The parts listed are just that listed. They will try to sell you sonex stuff to make fit. They have no cowl not even the original tail wheel it's just having the original design under the same roof.
